Oakbank Racing Carnival

Encore Group provided a range of catering options to over 2,600 corporate clients over the Easter weekend.  Sit down luncheons, buffet menus and cocktail packages were catered for over the 2 day racing carnival.

An extensive range of food was served over the two days of the Oakbank racing carnival. Corporate marquees, the young members bar, the committee room and even more. This menu was enjoyed by the Foster’s Corporate Marquee.

Lamb Loin served with sweet potato frittata, garlic and rosemary vinaigrette

Char grilled chicken breast with four cheese sauce and topped with baby spinach salad

Calamari and chorizo salad with garlic aioli

Greek lamb salad with cherry tomatoes, red onions, black olives and feta cheese

Honey roast duck with coriander, mint and orange sauce

Rocket salad with shaved parmesan and balsamic reduction

Crusty bakehouse breads and rolls

Individual passionfruit sabayon with brandy snap

Coconut pannacotta with minted mango coulis

Hot cross buns

Cheese times three platter – Jindi triple cream, King Island creamy blue and vintage cheddar with quince paste and semi dried muscatels
