Company Christmas Party

Encore Group recently catered for a company Christmas party which was held in a marquee - located in the grounds of the company.



An intimate affair, 35 people in attendance were served a menu consisting of;

Entree
Peppered calamari and chorizo salad with garlic aioli

Pepper crusted beef fillet, oven dried tomato, blue cheese crouton, pesto olive oil

Main Course
Lamb rump served with sweet potato frittata, garlic and rosemary vinaigrette

Prosciutto Wrapped Chicken Breast on smoked paprika rosti, semi dried tomato pesto and shaved parmesan

Atlantic salmon on wilted spinach, ginger and soy glaze

Dessert
Sweet Temptations Platter - Tira misu in espresso cups, lemon curd tart, brandy snap and passionfruit sabayon

Afters
Cheese Times Three Platter - Jindi triple cream, King Island creamy blue and vintage cheddar with quince paste and semi dried muscatels
